Koi Zen Cellars Merlot Marinade

1 cup Koi Zen Cellars 2015 Dry Creek Merlot Wine, enjoy  another cup while your are creating this marinade.

2 cloves garlic, minced

1/3 cup minced shallots

3 Tbsp Spicy Brown Mustard

1/2 tsp coarse ground black pepper

1 tsp kosher salt

1 Tbsp Fresh Parsley

1 Tbsp Fresh Rosemary

1/4 Cup Balsamic Vinegar

1/2 Cup extra Virgin Olive Oil

Marinade: Combine all ingredients, except Olive Oil in a bowl. Mix well. Slowly add olive oil, while whisking all ingredients to emulsify  and thickened. Pour over Red meat and marinate at least 2 hours or overnight in the refrigerator.

Add to red meats such as steak, beef tenderloin or beef ribs.
